HIPPY-HIPPY

It is that time of the year again - rosehips are ready (or almost ready) to pick. Lasy year o got very enthusiastic and made vitamin c powder, and saved seed as well as making syrup. This year I am making "NO-COOK ROSE HIP PASTE". You could purchase de-seeded hips on line, but you don't know how they have been processed and they are dry and unappealing.

If you have a kid rose bush or access to one you will have more than enough hips. The best are from the little wild Rose canina (dog rose).

HOW TO: (No quantities here... just do the best with what you have) Pick a heap of rose hips, keeping in mind that the more you have the more you will have to de-seed. Cut in half, scrape out the seed (a job to do in front of the TV).


Discard the seeds and stalks. Put the flesh into your small processor or thermomix and whizz it all up to a paste adding cider or apple juice to get the consistency you want.


Add honey if you need sweetness, cinnamon, maybe a slice or two of ginger.. and away you go.
